Tonight’s dinner was fully inspired by my keto diet. If you haven’t kept up with the blog, I’m officially doing keto. When I saw all the ways I could still indulge in my loves of fattening foods and wine, I couldn’t resist. Honestly, there are so many reasons to go keto! Since I had to eliminate starch from my diet, cauliflower has been my new best friend. This cauliflower bake recipe is a result of my new obsession with cauliflower. Trust me, it’s so versatile!
Initially, I got the idea from this recipe I found on Pinterest. It was a sweet potato and chicken bake. As my fridge is filled with keto friendly food now, I was inspired to take my own twist on the recipe. When I tell you it came out amazing, you’ll want to definitely take me at my word.
Cauliflower Bake Recipe With Ground Beef & Cheese

As I started to prepare this dish, babe swore I was just going to burn down the house with another one of my ideas. I try to cook so many recipes that he didn’t even recall the sweet potato and chicken recipe I tried a few months back. Doesn’t that sound like the good life? If only us moms had an in-home chef to whip up new dishes every day to the point that we can’t even remember them all? Ha! Not in this lifetime ladies.
CAULIFLOWER BAKE DIRECTIONS
Anywhooo, this recipe came out just the way I envisioned despite my husband’s skepticism. This cauliflower bake recipe starts with you coating the cast iron pan with extra virgin olive oil (or whatever oil you choose).
Place the cast iron pan on the stove to medium heat.
Preheat the oven to 400 degrees in the meantime.
Chop up the cauliflower into the individual florets. Cover the bottom of the pan with your chopped cauliflower. It’s not the easiest task to cook hard vegetables in a recipe like this. Placing the cauliflower at the bottom ensures that it’s fully cooked by the time dinner is finished.
I like my cauliflower with a bit of flavor so I added a few tablespoons of butter and a dash of sea salt once all the cauliflower is in the cast iron pan.
Add the ground beef on top of the chopped cauliflower.
(I personally like to break up the ground beef with a spatula.)
Season your ground beef.
I personally used sea salt, ground black pepper, cajun seasoning and mango habanero seasoning.
By this time, the food should have been cooking for a few minutes. After about 6-8 minutes total, remove the cast iron from the stove and place in the oven. Be careful and grab a mitt! Cast iron pans retain heat and can easily burn you. We wouldn’t want that, right?
Put a timer on for 25 minutes. During this time, cut up extra sharp cheese into blocks as pictured below.
Once your timer goes off, spread the blocks of cheese out evenly throughout the dish. Put the dish back in the oven.
Let the oven cook for another 15 minutes to ensure the meat is fully cooked and cheese is fully melted. You can even let it go to 20 minutes if you want. I love my meat well done so I chose to leave it for 20 more minutes.
CAULIFLOWER BAKE INGREDIENTS
A Head of uncooked cauliflower
1 1/2 Pound of ground beef
1 Block of Kraft extra sharp cheddar cheese
2 Tablespoons of extra virgin olive oil ( I use the Pompelan brand)
2 Shakes of each of the following seasonings ( or your own seasoning preferences)
Mango Habanero Seasoning
Cajun Seasoning– (Here’s the one I use)
Garlic and Onion Pepper — (Here’s the one I use)
Red Crushed Peppers ( Only 1 Dash) — — (Here’s the one I use)
Wahlaaaaah! You’re finished!
