Today has been time consuming and exhausting to say the least. Surely, I wasn’t prepared to make a big dinner at all! It was just my luck that I remembered this mussels recipe I tried out during my pregnancy. It was super easy and low maintenance. Keep reading for the details!
Ladies, how many times do you wish dinner could just make itself? No one looks forward to burning in the kitchen after a long day of work. Meals that are low maintenance and budget friendly are essential for the work week. I know that’s true for my household at least. I was shopping in Wegmans (a supermarket) where the employees were serving samples.It was only about $6 for a large bundle of fresh mussels. So I thought, “why the heck not?!” I’ll let you girls know the truth. I have never cooked Mussels before this. For a long time, I barely even ate the stuff. Boy was I missing out! Hopefully, you can join in on this foodie approved recipe as well!
If you are a newbie like me, you may need a bit of advice with cooking this meal. Google has been my personal chef, doctor, and best friend these days. It didn’t disappoint with helping me out on this recipe. I found one online that only required about 5 minutes of cooking time. The ingredients were a bit improvised as I didn’t have everything in the recipe. It still came out awesome! My boo loved it too!
- If any of the mussels don’t close when you hit it, TRASH IT! This means the mussel is dead and shouldn’t be consumed. Trust me! I know it hurts your heart to see food go to waste.
- Feel free to alter it to your own tastes. I used beer that my boo scored from a brewery. This may not be a favorite of yours. There are alternatives such as using wine instead for the broth.
- Don’t walk away from the dish! This dish cooks super fast! I’m infamous for walking away and starting something new. As it cooks fast, you don’t want to overcook it and allow the mussels to become a bit tough.
- Get ready to chow down! It’s really that good. No seriously!
What I used
In my dish, I used chicken broth, beer, garlic, and parsley. There was also minimal lemon and oil for flavor purposes. I wanted to give credit to the person who’s recipe I used. Sadly, I couldn’t find it. Don’t you hate when that happens?! I wanted to allow you guys the opportunity to alter a detailed recipe to your liking. Thankfully, the mussels were enough for us. If you know you need a large meal, I’d suggest making this a filling appetizer and add a easy main entree. Some nice bread would go great with this dish.
